Ingredients for the Egg Slider

1 cup = 200 ml; 1 tbsp = 15 ml

2 Eggs (whole)
3 tbsp Butter
2 tbsp Milk
1 tbsp Sundried tomatoes, finely chopped
1 tbsp Black olives, finely chopped
1 tbsp Jalapenos, finely chopped
3 – 4 Baby spinach leaves
4 Mini burger buns
2 Cheese slices (preferably cheddar)
Salt to taste
Tabasco, a few drops
Chili flakes to taste

Instructions for the Egg Slider

1. In a bowl, whisk the eggs, milk and 1 tbsp of butter.
2. Heat a saucepan. On a low flame cook the eggs. Continue pulling, lifting and folding the egg mixture, until thickened and no visible egg liquid remains (I prefer the texture smooth and creamy; not too dry). Switch off the flame.
3. Add in the salt, jalapenos, sundried tomatoes, olives, Tabasco and chili flakes. Mix well and keep aside.
4. Meanwhile, heat a grill pan. Split the buns into two halves equally. Butter the buns and grill them on a pan. Wash the spinach leaves and place them on one bun half. Top with the scrambled egg mixture. Cut 1 cheese slice into 2 halves. Place one on top of the egg mixture and close the bun with the other half piece. Grill for 1 minute (be careful just to warm the bread and let the cheese melt a bit. Do not brown the buns too much).
5. Serve warm with ketchup, mayo or mustard sauce.
