Cottage Cheese Breakfast Slider

Paneer slider can be a fulfilling appetizer, breakfast or a snack recipe that can satisfy your hunger as well as your taste buds.

Servings 2 – 3 persons

Ingredients for  the Cottage Cheese Slider

1 cup = 200 ml; 1 tbsp = 15 ml

50 gms Cottage cheese, diced (as shown in image)
1 tbsp Spring onions, finely chopped
1 tbsp Red capsicum, finely chopped
1 tbsp Yellow capsicum, finely chopped
1 tbsp Jalapenos, finely chopped
1 Cheese cubes, about (20 gms), diced (Amul or Britannia)
3 tbsp Butter
4-5 Baby spinach leaves
4-5 Mini burger buns
Chili flakes to taste
Tabasco, a few drops
Salt to taste

Instructions for the Slider

1. Heat 2 tbsp butter in a pan. Sweat the spring onions, and red and yellow capsicums for about 2 minutes.
2. Add the chopped paneer (cottage cheese) pieces along with cheese.  Cook for 1 – 2 minutes.
3. Add in the jalapenos, salt, Tabasco and chili flakes and cook for 1 minute. Switch off the flame and keep the mixture aside.
4. Heat a grill pan. Split the buns into 2 halves and butter the buns well. Grill them lightly on a hot grill pan.  Clean and wash the baby spinach leaves.  Place one leaf on the bun. Top the leaf with 1 – 2 tbsp of cottage cheese mix. Place the other half of the bun and heat it for 1 minute. Don’t let it brown.  Serve warm with mayo or ketchup.
