Baked Potato Skins!!! “Zero Kitchen Waste” is an added bonanza to this yummy n extreme low calorie snack. Amenable to an assortment of flavourings such as garlic, chilli, herbs, chat masala etc., these skins are great when dunked in Mayo, Mustard, old fashioned tomato ketchup OR any other condiment your mind can stir up!

Glued in front of your TV’s, replace those bowls of Popcorn or Nachos with this deliciously healthier option! Also an irresistible bar snack by any yardstick n likely to appeal to one and all!!!

Ingredients for the Potato Peel Baked Chips

( 1 cup=200 ml, 1 tbsp=15 ml)

3 cups Raw Potato Peels (potatoes washed, scrubbed well and dirt removed)
3 – 4 tbsp Olive oil
3 – 4 tbsp Finely chopped garlic
Salt to season
Tabasco, a few drops
Red chili flakes to season
Chaat masala to season
Peri Peri mayonnaise (to serve)
Tomato ketchup (to serve)

Instructions for the Potato Peel Baked Chips

1. Preheat your oven to 200°C. (Fan Oven). 220°C, in a normal oven.
2. Collect the potato peels. They should be wiped well, and no moisture in them.
3. Coat them liberally with olive oil. Toss well.
4. Add in finely chopped garlic and toss well.

5. Bake in the preheated oven until crisp. In between half way, turn the peels with tongs, so that they evenly cook and don’t stick to your oven tray. (It took me 18-20 minutes to bake).
6. Once done, add in chili flakes, chaat masala, Tabasco, salt as per your taste.
7. Serve with mayonnaise or ketchup, or eat them just as it is.

Notes:

1. The peels can be collected over a few days and stored in fridge in an airtight container.
2. Please don’t use potato skins which turn greenish in colour.
3. You can add any seasonings on top. You can omit chopped garlic whilst baking and season the same with garlic powder. Try Peri Peri seasoning too; it tastes good.
4. Please feel free to try with other vegetable peels too like carrots, beets, etc.
5. After baking, can be stored in an airtight container for a few days
