“Kanda Bhajiya Waffle!!!” –  There mustn’t be a locale in India where you won’t hear the sizzle of our age old “Kanda Bhajiya” aka “Onion Fritters” being deep fried! Whether in the hygiene of your home or the incredulous “Khau Galli’s” of our business districts, these bhajiya’s are literally omnipresent!

This Waffle recipe, effortlessly and neatly, wraps in all the authentic flavours n crunchy texture of its street cousin while graciously avoiding the forbidden deep frying. Ever in a dilemma as you watch the rains pitter patter, simply go ahead and enjoy your cup of “masala chai” with this lower calorie Bhajiyas!

This creation has been inspired by my childhood friend Mamta nestled in New York.

Ingredients for the Kanda Bhajiya Waffles

( 1 cup=200 ml, 1 tbsp=15 ml)

¾th Cup Thinly sliced onions
½ cup Spring onion (greens only), finely chopped
½ cup Besan (gram flour)
½ cup Sooji (semolina)
½ cup Water
1 tsp Red chili powder
2 Green chilies, finely chopped
1 tsp Coriander powder
1 tsp Roasted jeera powder (cumin seeds)
2 tbsp Coriander leaves, finely chopped
1 tbsp Chaat masala or amchur powder
½ tsp Haldi powder
1 tbsp Oil
Salt to taste
A little oil for greasing

Instructions for the Kanda Bhajiya Waffles

1. Mix in all the ingredients and make a batter. Check and add seasonings according to taste.

2. Preheat your waffle maker. Once the green light comes up, it’s ready.
3. Grease the waffle machine with oil properly; especially taking care of the corners (I greased both top and bottom).
4. Fill the batter properly. Do not leave any hole or sides empty.

5. Cook until the waffle becomes crispy, around 2 – 3 minutes (setting the machine on medium). Serve immediately with chutney and ketchup.

Notes:

1. Please make this batter just when you are about to make waffles. The onions release water when mixed with salt and kept.
2. Fill a thick layer in the machine and cover all the corners as shown in the image. Do not keep opening the machine. Open once done.
