So here’s another fruit salsa that can be whipped up in a jiffy. Yes, the Pineapple Salsa – a sweet, spicy, and tangy appetizer. As always, feel free to modify the sweet and sour elements to suit your own palate. Pairs beautifully with chips or have them on crackers; and for those meat-eaters, grilled fish/chicken with pineapple salsa pairs deliciously well.

Ingredients for the Fresh Pineapple Salsa

( 1 cup=200 ml, 1 tbsp=15 ml)

1 ½  Cups Fresh Pineapple,  chopped
3 tbsp Spring Onions, finely chopped
2 tbsp Finely chopped green capsicum
2 tbsp Finely chopped Tomatoes (seeds removed)
2 tbsp Mint leaves finely chopped
2 tbsp Fresh Coriander leaves finely chopped
2 tbsp Jalapenos, finely chopped
1 tbsp Sugar
1 tbsp Lemon Juice
3 tbsp Olive Oil
Sea Salt to taste
Pepper to taste
Red Chili Flakes to taste

Ingredients to serve

1 packet Nacho Chips

Instructions for the Pineapple Salsa

1. Mix all the ingredients for the Salsa except salt. Chill in the refrigerator for 1 – 2 hrs.
2. Mix the salt just before serving.
3. Serve chilled with Nacho Chips.
