Green Moong Dal Rosti

Stuck with rationed supplies and ingredients? Well, here’s a possible rescue! A crowned jewel of the Swiss Cuisine, their very own Rösti, made in Indian style, using “Chilke wali moong dal”.

Load with veggies and seasonings of your choice to balance between nutrition and flavours. Ideally goes very well with coriander aka dhaniya ki chutney, but feel free to pair with condiments of your choice.

Disguise it from an array of garnishes to flatter the sombre appearance or to make it attractive for your lil munchkins!!!

Course Appetizer
Servings 1 – 2 persons (makes 2 Rösti)
Prep time 10 minutes (2 to 3 hours soaking time)
Cook time 10 – 15 minutes

Ingredients for the Green Moong Dal Rösti

(1 cup=200 ml, 1 tbsp=15 ml)

For the Batter

1 cup Green moong dal
4 tbsp Bottle gourd (doodhi) grated
4 – 5 tbsp Carrot, grated
¼th cup Cabbage, grated
¼th cup Boiled peas (optional)
3 – 4 Green chilies, finely chopped
1” piece Ginger, finely chopped
½ tsp Asafoetida (hing powder)
½ – 1 tsp Sugar
1 tsp Eno fruit salt
1 tsp Lemon Juice
2 – 3 tbsp Oil
4 tbsp White sesame seeds
4 tbsp Mustard seeds
Salt to taste

Instructions for the Green Moong Dal Rösti

1. Wash and soak the dal for 2 – 3 hours. Drain the water, and then, grind the dal coarsely.

2. Add in the vegetables, sugar, salt, hing, green chilies, ginger and mix well. Divide mixture into two halves.

3. Mix the Eno fruit salt with lemon juice and add the frothy mixture to the batter immediately.

4. Heat 1 tbsp oil in a small non-stick pan. Splutter 2 tbsp mustard and 2 tbsp sesame seeds. Spread half of the dal mixture (about half inch thick).

5. Cook on the slow flame, until the base turns golden brown and crisp, and it starts to leave the sides of the pan.
6. Very carefully flip it over, cook on a slow flame for 5-7 minutes. Do not cover with a lid.

7. Invert in a plate, cut into wedges and serve hot with green chutney.
8. Repeat the same with the remaining batter.

Note:-
1. You can add the veggies of your choice like capsicums, spinach, grated potatoes, etc. Check and add seasonings too as per taste.
