Gond ke Ladoo

A winter ritual in my home every year is the making of gond ke Ladoo . Dadima ka nushka to keep us healthy warm and strong during winters is to have one ladoo a day . We usually make a big batch for the winter months and have one heated up each day.

Gond is a good source of calcium this helps in keeping the bones and joints strong. Being heaty, it hereby helps in providing heat to the body during cold winters. Also given to nursing mothers during their confinement period as it helps in strengthening the backbones and aids in lactation.

Care should be taken whilst buying gond. Good quality gond should be sourced. Also, the gond should be fried well as a slightly raw one can cause stomach problems.
So here’s the traditional recipe of my home. Each household has their own secrets. Some also include coconut, turmeric, ground ginger etc in it.

Ingredients for Gond ke Ladoo

(1 cup = 200 ml; 1 tbsp = 15 ml)

½ kg Whole wheat flour
125 gm Gond
300 gm Ground sugar
350 gm + 2 tbsp Ghee
½ tsp Elaichi powder
A few strands Kesar
100 gm Almonds, chopped coarsely

Instructions for the Gond ke Ladoo

1. Dry the gond outside in the sun for half a day or so.

2. Crush them into small pieces. (about the size of chana dal)

3. Heat 350 gms ghee in a vessel.  Fry the gond in ghee.  It should puff up and come on top.  The colour should be golden brown.  Keep aside.

4. Now in the same ghee roast the atta on a slow flame. (If the mixture feels dry add in a little more ghee).  Let the flour cook until it releases a good aroma.

5. Take 2 tbsp ghee in a separate pan. Roast the almonds in it.

6. Now mix the flour and almonds, and roast on a slow flame for 2-3 minutes.

7. Remove the mixture and cool. Now add the gond, sugar, elaichi powder and kesar.  Shape into big round ladoos or small as shown in the image.

7. Can be stored in an airtight container for up to a month.
