Feels good being back from my short sabbatical and really nostalgic to share this fusion appetizer recipe…recently made for my daughter who has just returned to New York for her onward studies.
The caramelized onions remind you of a red onion jam with its inherent sweetness and pairs beautifully with the saltiness of Feta… subtly glazed with the acidity of balsamic and artistically layered on the crunchy traditional Plain Puffs aka Khari biscuits…

Ingredients for the Caramelized onion & feta puffs1 cup = 200 ml; 1 tbsp = 15 ml |

2 medium | Red onion, thinly sliced |
1 tsp | Brown sugar |
2 tbsp | Feta cheese, crumbled |
1 tbsp | Amul butter |
A few | Thyme leaves |
1 tsp | Olive oil |
1 tbsp | Balsamic vinegar or balsamic glaze |
5 nos. | Store-bought plain puff biscuits |
Instructions for the Caramelized onion & feta puffs |

1. | Heat the butter and olive oil in a non-stick pan. |
2. | Slowly cook the onions along with the brown sugar. Cook them on a slow flame for 15-20 minutes, stirring occasionally to prevent them from sticking to the pan. |
3. | When the onions are softened and turn golden, add the thyme leaves and balsamic vinegar. Keep aside. |

Split the puff biscuits into 2 equal halves. Now add 1 tbsp of the onion mixture to the puff biscuits. Top the mixture with crumbled feta cheese (Add as much as you prefer. The more the better). Bake in a preheated hot oven @ 180ºC for 7-8 minutes. |
5. | Drizzle or glaze with balsamic glaze and serve immediately. |
Note:-
- The onion mixture can be prepared ahead of time and kept.
- Please assemble and bake the puff biscuits just before serving as they tend to become soggy soon.
