Ingredients for the Cottage Cheese Slider1 cup = 200 ml; 1 tbsp = 15 ml |

50 gms | Cottage cheese, diced (as shown in image) |
1 tbsp | Spring onions, finely chopped |
1 tbsp | Red capsicum, finely chopped |
1 tbsp | Yellow capsicum, finely chopped |
1 tbsp | Jalapenos, finely chopped |
1 | Cheese cubes, about (20 gms), diced (Amul or Britannia) |
3 tbsp | Butter |
4-5 | Baby spinach leaves |
4-5 | Mini burger buns |
Chili flakes to taste | |
Tabasco, a few drops | |
Salt to taste | |
Instructions for the Slider |

1. | Heat 2 tbsp butter in a pan. Sweat the spring onions, and red and yellow capsicums for about 2 minutes. |
2. | Add the chopped paneer (cottage cheese) pieces along with cheese. Cook for 1 – 2 minutes. |
3. | Add in the jalapenos, salt, Tabasco and chili flakes and cook for 1 minute. Switch off the flame and keep the mixture aside. |
4. | Heat a grill pan. Split the buns into 2 halves and butter the buns well. Grill them lightly on a hot grill pan. Clean and wash the baby spinach leaves. Place one leaf on the bun. Top the leaf with 1 – 2 tbsp of cottage cheese mix. Place the other half of the bun and heat it for 1 minute. Don’t let it brown. Serve warm with mayo or ketchup. |
