Strawberry Arugula Salad

My obsession with strawberries continues. (Honestly speaking I would simply gorge on them dipped in warm Belgian chocolate). But hey healthy eating right!

Healthy eating week two of 2019! Wow! Can’t believe how I’m sticking to my resolution (God knows how long it lasts). Well, until then for those of you like me who like to eat clean here’s a delightful salad recipe which I’m sure all will adore.

A rich source of iron, vitamins A and C, arugula here is balanced perfectly with the acidity of balsamic vinegar, strawberries and orange juice. Pairs beautifully with the creaminess of crumbled feta and toasted pecan nuts. Those of you who wish to substitute arugula with baby spinach and pecans with walnuts may feel free to do so.

A simple visual treat to the eyes as well as the palate! I promise you would be having this all season long and wish the strawberries last forever just as I do.

So, do give this simple salad a try. A sure show stopper at a party too!

 

Strawberry Arugula Salad

Course Salads
Servings 4 persons
Preparation Time 10 minutes

Ingredients for Strawberry Arugula Salad

(1 cup = 250 ml)

2 cups Arugula leaves
10-12 nos. Strawberries, hulled and sliced thinly
8-10 nos Pecan nuts (can substitute with walnuts)
2 tbsp Feta cheese crumbled
½ Red onion thinly sliced

Ingredients for Dressing

(1 cup = 250 ml)

3 tbsp Olive Oil
1 tbsp Balsamic vinegar
2 tbsp Fresh orange juice
Salt to taste
Freshly ground pepper to taste

Instructions for Salad

1. Wash the arugula leaves well and dry them. (you can use a salad spinner as it makes it
crunchier). Tear the salad leaves with the hand.
2. In a salad bowl, layer the arugula leaves, strawberry slices, red onion slices.
3. Add in the pecan nuts and feta crumbled.

Instructions for the Dressing

1. Mix all the ingredients for the dressing. You can adjust the quantities as per your taste.

Serving the Salad

1. The salad should be kept in the fridge and should be served chilled.
2. Add the dressing just before serving the salad. Toss well and serve immediately.
