A super quick and easy appetizer recipe which can be made in a jiffy. Usually, in the summer months, my refrigerator is well stocked with Alphonso mangoes. Whenever any unexpected visitor or my son’s friends drop in (which by the way is most common in our household) I chop up the mangoes and make a refreshing fresh salsa. Always use a sharp fruit knife to cut this evenly into dices. Feel free to adjust the seasonings as per your taste and voila you have an appetizer ready in under 5 minutes.

Ingredients for Fresh Mango Salsa(1 cup = 200 ml, 1 tbsp = 15 ml) |

2 nos. | Alphonso Mangoes, med sized, diced. |
3 tbsp | Finely chopped spring onions white and green both. |
2 tbsp | Jalapenos, finely chopped |
2 tbsp | Coriander leaves, finely chopped |
1 tsp | Sugar |
1 tbsp | Lemon juice |
2 tbsp | Finely chopped mint leaves |
2-3 tbsp | Olive oil |
Sea salt to taste | |
Pepper to taste | |
Chilli flakes to taste | |

Instructions for the Mango Salsa |

1. | Combine all the ingredients for the salsa except salt. Chill in the refrigerator for 1-2 hrs. Add a pinch of salt and mix well just before serving. |
2. | Serve chilled with nacho chips. |
