Ingredients for the Watermelon Feta Salad

(1 cup=200 ml, 1 tbsp=15 ml)

1 cup Mixed greens (washed and dried)
2 cups Watermelon; deseeded and scooped
2 tbsp Sliced black olives
2 tbsp Walnuts
3 tbsp Feta cheese crumbled

Ingredients for the Salad dressing

( 1 cup=200 ml, 1 tbsp=15 ml)

1 – 2 tbsp Extra virgin olive oil
2 tbsp Lemon juice
1 tsp Honey
Salt to taste (Himalayan pink salt, preferably)
Crushed pepper to taste
Balsamic glaze (optional)

Instructions for the Salad

1. In a salad bowl, add in all the salad ingredients. Chill in a refrigerator for one hour.

Instructions for the Dressing

1. Mix in all the ingredients and put to chill.

Assembly and Serving:

1. Add the chilled dressing to the Salad and serve immediately.
