Winters are calling, and with that, the cravings for all things hot hit the roof. Nothing does it better than my soul-warming Sesame Peanut Butter Noodles.
Delicious with a kick of umami flavours, these noodles are apt for any occasion- weeknight dinners, lazy Sunday lunches, or evening snacks for your kids. The ingredients are straightforward and easily available in your pantry.
Peanut butter and sesame oil add richness to the sauce while ensuring the glaze sits well on the noodles. I’ve only added red capsicum to my recipe but you can add more veggies to the mix suited to your taste. These delicious noodles have my kids’ hearts and mine too.

Ingredients for the Sesame Peanut Butter Noodles(1 cup=200 ml, 1 tbsp=15 ml) |

¼ cup | Peanut Butter |
4 – 5 tbsp | Light soy sauce (Kikkoman) |
2 – 3 tbsp | (Anantya) Cold pressed sesame oil |
1 tbsp | Brown sugar |
1 – 2 tbsp | Chili paste (sambal oelek or sriracha) |
1 – 2 tbsp | Garlic minced |
1 tbsp | Ginger grated |
½ cup | Green onions finely chopped |
¼th | Red capsicum thinly sliced |
Salt to taste | |
Vinegar to taste | |
2 – 3 tbsp | Toasted sesame seeds |
1½ cups | Boiled noodles (flat Thai rice noodles) |
½ cup | water |
Instructions for the Sesame Peanut Butter Noodles |

1. | Heat sesame oil in a pan. Sauté ginger and garlic on high heat. |
2. | Sauté the red capsicum for 2 minutes. Let the crunch remain. |
3. | Add in peanut butter, soy sauce, brown sugar, chili paste and water. Cook for 1 – 2 minutes. |
4. | Add in the boiled noodles. Season and add salt (usually the soya and peanut butter contains salt). Add in the vinegar and scallions. Mix well. Garnish with toasted sesame seeds and serve immediately. |
Notes:
- You can increase or decrease the spice (sriracha or sambal oelek) as per your taste.
- You can substitute sugar with honey.
