That special and sought after time of the year for our precious Lil munchkins is here….14th Nov. aka Children’s day has finally arrived.
Since most children including mine love chocolate….. I figured this super way to surprise my son by baking these scrumptious “Chocolate Cup Cakes”. Extremely easy to make even for a novice in the kitchen and literally a 10-minute recipe, this sinful treat is deliciously gooey and simply melts in your mouth.
Really hope these cupcakes bring a twinkle in those innocent eyes back home like they unfailingly do with my son!!!

Ingredients for the Chocolate Cupcakes( 1 cup=200 ml, 1 tbsp=15 ml) |

200 gms | Dark chocolate (preferably Callebaut) |
200 gms | Butter (Amul) |
150 gms | Castor sugar |
4 Nos | Whole eggs |
65 gms | All-purpose flour (maida) |
Ingredients for the Ganache Icing |

125 gms | Dark chocolate, chopped into small pieces |
90 gms | Fresh cream (Amul) |
10 gm | Butter (Amul) |
Sprinkles for decoration | |
Instructions for the Chocolate Cupcakes |

1. | Melt the dark chocolate in a double boiler. Melt the butter along with it. Mix well and keep aside. |
2. | Whilst it is warm add the castor sugar and mix well. |
3. | When the mixture cools to room temperature add the eggs (1 at a time) and whisk well. |
4. | Fold in the flour |
5. | Pour into greased cupcake moulds and bake in a PRE HEATED OVEN AT 165°c (fan oven) for 10-12 minutes. |
Insert a skewer and check if it’s done.
Instructions for the Ganache |

1. | Soften the butter to room temperature. |
2. | Place the dark chocolate in a bowl. |
3. | In a saucepan, bring the cream to a boil and then pour the hot cream over the chopped chocolate. |
4. | Whisk well to combine. Add the butter and whisk well to form a smooth ganache. |
Assembling: |

1. | On the cooled chocolate cupcake, frost with the ganache frosting. Decorate with sprinkles. |
